Tempeh tacos & dinnertime company

Weeks seem to fly by and while I love the nights when we’re busy with friends or family, I always look forward to the nights that we have at home – just the two of us.  I love thinking about what I’m going to make for dinner throughout the day, turning the music up loud while I cook before Craig gets home from work, and experimenting with ingredients and flavors along the way.

Tonight we had veggie tempeh tacos.  They were simple to make and super flavorful!

Ingredients

tempeh, red onion, muchrooms, kale, cilantro, garlic, olive oil, avocado, salsa, yogurt dip, tortillas

Directions

saute tempeh, red onion, mushrooms, kale & garlic.  make guacamole with avocado and salsa.  serve in warm tortillas!

We enjoyed our tacos with homemade sweet potato fries!

I love dinnertime with Craig.  There is something so relaxing and enjoyable about sitting down with someone you love, eating good food and catching up.  Tonight we talked about the special act of eating with others.  When you share food with other people you usually also end up sharing conversation, gratitude and in some mysterious way you have a connection through the very food that you consume.  It makes a simple weeknight dinner seem a little more significant!
