I love to go out for dinner. However, it can be hard to enjoy a dinner out when you know you have a kitchen full of good food! Tonight we did dinner at home and then walked down the street for an outdoor beer.
Here’s what we were working with:
I was inspired by a recipe in Better Homes & Gardens, but used what I had on hand and barely followed the directions.
First, I preheated the oven to 425. Then I sauteed up a mix of veggies that we had in the fridge.
I stretched out our pizza dough on a floured surface.
Instead of pizza sauce, we opted for fresh avocado. Yum!
Next, we piled on the sauteed veggies.
Craig sprinkled some cheese on top.
Then, inspired by the recipe, we folded over the dough on either side.
I simply cut the folded pizza into 2 inch thick slices.
We placed these little pizza rolls on a lightly greased cookie sheet and popped them in the oven for about 15 min.
By the time we cleaned up the kitchen they were done!
We each enjoyed two of these scrumptious little pizza rolls! They were flavorful, healthy, and super easy to make.
Since this made for a pretty inexpensive Friday night dinner, we decided to walk down the street for a beer at Poor Phil’s.
