We’re on vacation, but I wanted to drop in and leave you a quick pasta idea.
Key flavor ingredient: heirloom tomatoes.
Other ingredients: spinach artichoke dip mix from farmers’ market (not creamy) & whole wheat pasta.
I combined a diced tomato with about 1/4 cup of spinach artichoke mix, along with 1/4 sliced sweet white onion.
Once my pasta was cooked, I mixed it all together.
I thought that it needed a little crunch and a little zip, so I added a handful of roasted cashews and a pinch of red pepper flakes.
