Pumpkin Oats

Fall is by far my favorite season.  I love bundling up and going for a run in the cooler weather, candles and warm dinners are much more appealing when it’s a little chilly outside, and pumpkin can be added into any meal throughout the day!

One of my favorites is pumpkin oatmeal.  It might sound strange, but it is a delicious, healthy, fall breakfast – trust me!

I simply mix steel-cut oats, rolled oats, about 1/2 C pumpkin puree, 1/2 C soy/almond milk, and 2 T honey.

I love cooking oats on the stove top, but I also like the convenience of cooking them quickly in the microwave for about 2 minutes.  Such a quick breakfast!

Keeping with the pumpkin theme, I enjoyed my oatmeal with a cup of pumpkin spice tea!

I love when food can put you in the mood for a good day and make you more in tune with the current season.
